  • 1 pound ground turkey (or beef)
  • 1 medium yellow onion (diced)
  • 4 medium carrots (finely diced)
  • 4 medium celery ribs (finely diced)
  • 5 teaspoons minced garlic (about 5 cloves)
  • 4 cups beef broth (or chicken broth)
  • 2 (15 ounce cans) diced tomatoes
  • 1 (15 ounce can) red kidney beans (drained and rinsed)
  • 1 (15 ounce can) cannellini beans (drained and rinsed)
  • 1 1/2 cups ditalini pasta
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1/2 teaspoon dried thyme
  • 1/4 cup chopped fresh basil (optional)
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  1. In a large pot over medium-high heat, brown 1 pound of ground turkey until fully cooked, about 5 minutes. Drain excess grease.
  2. Add diced onion, carrots, and celery to the pot. Cook until softened (about 7 to 10 minutes), then stir in minced garlic for the last 1 to 2 minutes.
  3. Pour in 4 cups of beef broth and add 2 cans of diced tomatoes, drained beans, salt, pepper, and thyme. Bring to a boil.
  4. Stir in 1.5 cups of ditalini pasta and reduce heat to medium. Simmer until pasta is al dente (around 7 minutes).
  5. Serve hot with optional garnishes like fresh basil or grated cheese.
