  • 1 cup mayonnaise
  • 1/4 cup Italian dressing
  • 2 tablespoons white vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/2 cup diced red onion
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh parsley
  • 1/2 cup chopped turkey slices
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook elbow macaroni in salted boiling water for 8-10 minutes until al dente. Drain and rinse with cold water.
  2. In a large mixing bowl, whisk together mayonnaise, Italian dressing, white vinegar, Dijon mustard, sugar, salt, and black pepper.
  3. Add cooled macaroni to the dressing mixture and toss gently to coat.
  4. Stir in cherry tomatoes, cucumber, red onion, black olives, and chopped parsley until evenly distributed.
  5. If using, add the chopped turkey slices and fold them gently into the salad.
  6. Sprinkle grated Parmesan cheese on top and mix gently.
  7. Chill in the refrigerator for at least one hour before serving to meld flavors.
