  • 45 pound turkey breast, bone-in, skin-on
  • 1/2 cup unsalted butter, softened
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh sage, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, quartered
  • 1 lemon, sliced
  • 1 orange, sliced
  • 1/2 cup chicken broth

Instructions

  1. Preheat oven to 325°F (165°C). Pat turkey breast dry.
  2. In a bowl, mix butter with lemon zest, orange zest, herbs, garlic, salt, and pepper.
  3. Loosen skin on the turkey; spread half of the herb butter under the skin and rub the remaining over the outside.
  4. Place onion in the roasting pan; position turkey on top. Arrange lemon and orange slices around it.
  5. Pour chicken broth into the pan.
  6. Cover with foil and roast for about 1 hour. Remove foil and cook an additional 40 minutes until internal temperature reaches 165°F (74°C).
  7. Let rest for at least 15 minutes before carving.
