  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 8 oz cream cheese (softened)
  • 2 cups sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • 1 cup butter (melted and cooled)
  • 2 cups shredded zucchini

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a bundt pan.
  2. In a bowl, cream together softened cream cheese and sugar for about 2 minutes.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and melted butter.
  4. In another bowl, mix flour, baking soda, baking powder, and ground cinnamon.
  5. Fold in shredded zucchini into the wet mixture until combined.
  6. Pour half of the batter into the bundt pan; sprinkle half of the cinnamon swirl mixture on top. Repeat with remaining batter and swirl mixture.
  7. Bake for approximately 1 hour or until a toothpick inserted comes out clean.
  8. Let cool for 20 minutes before transferring to a wire rack.
