  • 1 cup chopped fresh cilantro leaves
  • 1 lime (juiced)
  • 3 to 4 tablespoons extra virgin olive oil
  • 2 tablespoons harissa (or your favorite chili paste)
  • 1 1/2 pounds large shrimp, peeled and deveined
  • Kosher salt and black pepper

Instructions

  1. Preheat your oven to 400°F.
  2. Trim the top off the garlic head, drizzle with olive oil, wrap in aluminum foil, and roast for about 10 minutes until tender.
  3. Once cool, peel and finely chop the roasted garlic.
  4. In a mixing bowl, combine roasted garlic, cilantro, lime juice, olive oil, and harissa. Whisk to blend.
  5. Heat a cast iron skillet over high heat. Pat shrimp dry, season with salt and pepper, then cook for about 2 minutes on each side until pink.
  6. Toss cooked shrimp in the sauce immediately before serving.
