  • 1 lb cooked and diced chicken tenderloins
  • 1 can (14.5 oz) black beans
  • 1 can (14.5 oz) diced tomatoes
  • 1 small white onion
  • 1 red bell pepper
  • ½ packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • Juice of 1 lime
  • Diced green onions

Instructions

  1. Preheat the oven to 350°F.
  2. Rinse and drain the black beans. Dice the onion and red bell pepper.
  3. In a mixing bowl, combine the chicken, sour cream, lime juice, diced tomatoes, and taco seasoning. Mix well and fold in half of the cheddar cheese.
  4. In a greased casserole dish, layer the black beans, followed by the diced vegetables. Spread the chicken mixture on top and sprinkle with remaining cheese.
  5. Bake uncovered for 28–30 minutes until bubbly and golden brown.
  6. Serve hot with your choice of toppings.
