Ingredients

  • Chicken breast

  • Eggs (lightly beaten)
  • Panko bread crumbs
  • Vegetable oil (for frying)
  • Olive oil
  • Onion (diced)
  • Garlic (minced)
  • Carrot (sliced)
  • Potato (diced)
  • Chicken stock
  • Water
  • Honey
  • Soy sauce
  • Grated apple
  • Curry roux

Instructions

  1. Prepare the chicken by slicing and pounding it to about ½ inch thick; season with salt and pepper.
  2. Set up a breading station with flour, beaten eggs, and panko bread crumbs in shallow dishes.
  3. Coat each chicken piece in flour, dip in eggs, then press into panko.
  4. Heat vegetable oil in a deep pan to 340°F (170°C) and fry each piece for 3 minutes on one side, then flip and cook for another 3–4 minutes until golden brown. Drain on a wire rack.
  5. For the curry sauce, sauté onion and garlic in olive oil until fragrant. Add carrots and potatoes; cook briefly.
  6. Pour in chicken stock, water, honey, soy sauce, and grated apple; bring to boil then simmer until vegetables are tender.
  7. Stir in curry roux until dissolved; simmer for another 10 minutes until thickened.
  8. Serve sliced chicken katsu over rice topped with curry sauce.
