  • 4 cups shredded cooked chicken
  • 2 cups instant rice
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream
  • 1 cup frozen diced onion and bell pepper blend
  • 1 can (10 ounces) diced tomatoes with chilies
  • 1.5 cups chicken broth
  • 1 packet (1.12 ounces) fajita seasoning
  • 1 package (8 ounces) shredded Mexican blend cheese

Instructions

  1. Preheat your oven to 350°F and lightly spray a 9×13 inch baking dish with cooking spray.
  2. In a large mixing bowl, combine shredded chicken, uncooked rice, cream of chicken soup, sour cream, onion and bell pepper blend, diced tomatoes, chicken broth, fajita seasoning, and half of the shredded cheese. Mix well.
  3. Transfer the mixture into the prepared baking dish and spread evenly. Cover tightly with aluminum foil.
  4. Bake for 35 to 45 minutes or until the rice is tender.
  5. Remove from the oven, sprinkle the remaining cheese on top, then bake uncovered for an additional few minutes until melted.
