  • 4 boneless, skinless chicken breasts
  • 4 slices of chicken breast
  • 4 slices of Swiss cheese
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko or regular)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 cup milk
  • 1 tsp Dijon mustard
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound chicken breasts to a thickness of about ¼ inch. Layer each breast with a slice of chicken and Swiss cheese, roll tightly, and secure with toothpicks.
  3. Dredge each roll in seasoned flour, dip in beaten eggs, and coat in breadcrumbs.
  4. In a skillet over medium heat, sear the rolls in olive oil and butter until golden brown on all sides.
  5. Transfer the rolls to a baking dish and bake for 20–25 minutes or until the internal temperature reaches 165°F (74°C).
  6. For the sauce, melt butter in a saucepan, whisk in flour, then gradually add milk until smooth. Stir in Dijon mustard and Parmesan; simmer until thickened.
  7. Remove toothpicks from rolls, slice them into rounds, drizzle with sauce, and serve.
