  • 1 cup strong brewed coffee, cooled
  • 16 ladyfingers (savoiardi)
  • 1 cup heavy cream
  • 8 ounces mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Cocoa powder for dusting

Instructions

  1. Prepare the cherry filling by mixing cherries, sugar, and cherry juice; let it sit for 15 minutes.
  2. Make the coffee mixture using cooled brewed coffee combined with cherry juice.
  3. Whip the heavy cream until stiff peaks form.
  4. In another bowl, combine mascarpone cheese, powdered sugar, and vanilla; stir until smooth.
  5. Gently fold whipped cream into the mascarpone mixture.
  6. Dip ladyfingers quickly in the coffee mixture and layer them in a rectangular dish.
  7. Spread half of the mascarpone mixture over the ladyfingers followed by half of the cherries.
  8. Repeat layering with remaining ingredients.
  9. Chill in the refrigerator for at least 4 hours or overnight before serving.
  10. Dust with cocoa powder and garnish with extra cherries if desired.
