  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

  • ½ teaspoon Italian seasoning
  • Salt and pepper, to taste
  • ¼ teaspoon red pepper flakes (optional)
  • 2 large eggs, lightly beaten
  • ¼ cup breadcrumbs for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped onion until soft, then add minced garlic and cook until fragrant.
  3. Gradually add spinach in batches until wilted. Drain excess liquid and let cool slightly.
  4. In a large bowl, combine ricotta, mozzarella, Parmesan, Italian seasoning, salt, pepper, red pepper flakes (if using), and beaten eggs.
  5. Fold in the cooled spinach mixture until combined; transfer to the baking dish.
