  • 1/2 cup chopped fresh chives, plus more for garnish
  • 1/4 cup chopped fresh parsley, plus more for garnish
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and cook until soft (5-7 minutes).
  2. Stir in garlic, thyme, rosemary, and optional red pepper flakes; cook until fragrant (about 1 minute).
  3. Add cubed potatoes and broth; ensure potatoes are submerged.
  4. Bring to a boil, then reduce heat, cover, and simmer until potatoes are tender (15-20 minutes).
