  • 1 tbsp Cajun seasoning

  • 1/4 tsp black pepper
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1 lb rigatoni pasta
  • Salt to taste
  • Optional: chopped chives for garnish

Instructions

  1. Cook rigatoni according to package instructions until al dente, then drain and set aside.
  2. In a bowl, combine cubed chicken with olive oil, Cajun seasoning, smoked paprika, garlic powder, and black pepper.
  3. Heat 2 tbsp butter in a skillet over medium-high heat and brown the seasoned chicken (about 6-8 minutes). Remove from skillet.
  4. In the same skillet, melt remaining butter over medium heat and sauté minced garlic until fragrant.
  5. Whisk in flour to create a roux; cook for about one minute.
  6. Gradually add milk and chicken broth, stirring continuously until smooth. Bring to a simmer.
  7. Stir in Parmesan and cheddar cheese until melted and creamy; season with salt.
  8. Add cooked rigatoni and browned chicken to the sauce; toss to combine.
  9. Serve immediately, garnished with chopped chives if desired.
