  • 2 cups powdered sugar (sifted)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 10 chocolate sandwich cookies (like Oreos), crushed for 'soil'
  • Fondant or candy carrots (store-bought or homemade)
  • Optional: green sprinkles, edible flowers, mint leaves for extra greenery

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, and spices until well combined.
  3. In another bowl, blend eggs, sugars, oil, yogurt, and vanilla extract until smooth.
  4. Stir in grated carrots, then gradually mix the dry ingredients into the wet mixture until just combined.
  5. Fill cupcake liners two-thirds full and bake for 20–22 minutes until a toothpick comes out clean.
  6. Allow cupcakes to cool completely before frosting with cream cheese frosting.
  7. Beat together cream cheese and butter until light and creamy, then gradually add powdered sugar, vanilla extract, and pinch of salt.
  8. Frost cupcakes generously using a piping bag or spatula.
  9. Sprinkle crushed chocolate cookies over frosting and press gently to stick.
