  • 2 cups matchstick carrots
  • 1/4 cup yellow onion, finely diced
  • 1 cup canned mandarin segments, drained
  • 1/3 cup dried sweetened cranberries
  • 2 tablespoons lemon juice
  • 1/2 cup vanilla yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions

  1. Cut both apples into matchstick pieces and toss with lemon juice in a bowl to prevent browning. Let sit for about 5 minutes.
  2. In a large mixing bowl, combine matchstick carrots, diced onion, and dried cranberries.
