  • 12 cups cubed French bread
  • 3 ripe pears, peeled and diced
  • 5 large eggs
  • 2 cups milk
  • 1 cup heavy whipping cream
  • ½ cup sugar
  • 2 tbsp brown sugar
  • 2 tsp ground cardamom (divided)
  • ¼ cup water
  • 10 cardamom pods
  • 6 tbsp butter
  • ¼ cup orange juice
  • zest of 1 orange
  • ½ tsp kosher salt
  • pinch ground cardamom

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine cubed bread, diced pears, brown sugar, and 1 tsp ground cardamom. Toss gently.
  3. In another bowl, whisk together eggs, milk, heavy cream, sugar, salt, and remaining cardamom until smooth. Pour over the bread mixture; let sit for 15 minutes.
  4. Transfer to a greased baking dish and bake for about 60 minutes until golden on top and set in the center.
  5. While baking, prepare the cardamom syrup by simmering sugar, water, cardamom pods, orange juice, zest, butter, salt, and a pinch of cardamom until thickened.
  6. Serve warm drizzled with cardamom syrup.
