  • 1 ½ tablespoons olive oil
  • 4 large sweet onions
  • 2 medium leeks (light green and white parts only)
  • 1 teaspoon salt
  • 1 teaspoon dried thyme
  • 2 tablespoons all-purpose flour
  • 1/3 cup apple vinegar
  • 4 cups vegetable broth
  • 2 cups milk

Instructions

  1. Preheat the oven to 350°F. Prepare the garlic by rubbing it with olive oil, wrapping it in foil, and roasting for about an hour.
  2. In a large pot, heat remaining olive oil over medium heat. Add sliced onions and leeks; cook uncovered for about 30 minutes, stirring often.
  3. Add salt and thyme; continue cooking until golden brown, about another 30 minutes.
  4. Stir in the flour and cook for an additional minute before adding apple vinegar and vegetable broth. Bring to a boil, then simmer for 30 minutes.
  5. Blend the roasted garlic with the onion mixture until smooth, then combine with milk in the saucepan and heat through.
