  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 tablespoon brown sugar
  • 3 cups chicken broth
  • 1 tablespoon rice vinegar
  • 1 cup jasmine rice
  • 2 cups water for rice
  • Green onions for garnish
  • Salt and pepper to taste

Instructions

  1. Cut chicken thighs into bite-sized pieces and season with salt and pepper.
  2. In a mixing bowl, combine soy sauce, sesame oil, garlic, ginger, and brown sugar; add chicken and marinate for 10 minutes.
  3. Rinse jasmine rice under cold water until clear. Bring 2 cups of water to a boil in a saucepan; add rice and simmer on low for 15 minutes until absorbed.
  4. Heat oil in a large pot over medium-high heat; sauté marinated chicken for about 5-7 minutes until caramelized.
  5. Pour in chicken broth and rice vinegar; bring to boil then reduce to simmer.
  6. Gradually add cornstarch mixed with water while stirring to thicken the broth; simmer for an additional 5 minutes.
  7. Serve the caramelised chicken over jasmine rice and garnish with sliced green onions.
