  • 1 1/2 tbsp vegetable oil
  • 750 g red onions, finely chopped
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 1 tsp ground allspice
  • 1/2 tsp chilli flakes
  • 250 g light brown sugar
  • 250 mL red apple vinegar
  • 90 mL balsamic vinegar

Instructions

  1. In a large saucepan over medium-high heat, heat the vegetable oil and add the finely chopped red onions. Sauté for about 10 minutes until soft and translucent.
  2. Stir in the salt, ground black pepper, allspice, and chilli flakes. Cook for an additional two minutes until fragrant.
  3. Add the light brown sugar along with both types of vinegar. Mix well and bring to a boil.
  4. Reduce the heat and simmer for about 20 minutes until the chutney thickens and becomes dark and sticky.
  5. Pour the hot chutney into sterilised jars and seal tightly for storage.
