  • 3 organic oranges
  • 2 cups water
  • 1 cup sugar (plus additional for coating)
  • 1 optional vanilla bean
  • Chocolate (optional for dipping)

Instructions

  1. Wash the oranges under running water using a vegetable brush.
  2. Trim the ends of each orange and score the peel with four lengthwise cuts.
  3. Carefully remove the peel and slice it into strips about 1/4-inch wide.
  4. Blanch the strips in boiling water twice, draining after each round.
  5. In a pot, combine blanched peels with 2 cups of fresh water, 1 cup of sugar, and optional vanilla bean. Boil then simmer uncovered for 30-35 minutes until translucent.
  6. Cool peels in syrup for 5 minutes before transferring them to a drying rack set over parchment paper. Allow to dry for at least 8 hours.
  7. Roll in sugar or dip in melted chocolate if desired.
