  • 2 cups granulated sugar

  • 2 large eggs (room temperature)
  • 1 cup buttermilk (or milk with lemon juice)
  • 2 1/4 cups very ripe mashed bananas (about 5 medium bananas)
  • 1/2 teaspoon kosher salt
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • Optional: 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 300°F and prepare two 9×5-inch loaf pans by buttering them and lining the bottoms with parchment paper.
  2. In a bowl, whisk together flour, salt, baking powder, and baking soda. If using pecans, mix them in now.
  3. In another bowl, cream together sugar and butter until light and fluffy. Add eggs one at a time, mixing well after each addition. Incorporate mashed bananas.
  4. Gradually add dry ingredients to the banana mixture alternately with buttermilk until just combined.
  5. Pour batter into prepared loaf pans and bake for about an hour or until golden brown and a toothpick comes out clean.
  6. Allow to cool completely before slicing.
