  • 3/4 cup chopped broccoli stems
  • 2 cups finely chopped broccoli florets
  • 1 cup chopped leek (white and light green parts)
  • 4 cloves garlic (minced)
  • 4 cups chicken or vegetable broth
  • 12 cups water
  • 1 tbsp mustard powder
  • Salt (to taste)
  • Pepper (to taste)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 cup dried orzo
  • 8 oz sharp cheddar cheese (grated)
  • 1 cup heavy whipping cream
  • 57 slices turkey slices

Instructions

  1. Preheat your oven to 400°F.
  2. In a large pot, heat olive oil and butter over medium heat. Add leeks, broccoli stems, and potato; cook for about 3 minutes. Stir in garlic, mustard powder, salt, and pepper.
  3. Pour in the broth and water; bring to a simmer for about 10 minutes until the vegetables are soft.
  4. Meanwhile, arrange turkey slices on a baking sheet and crisp in the oven for about 10–12 minutes.
  5. Blend the soup until smooth; return to the pot and bring to a gentle simmer.
  6. Stir in orzo and cook for about 5 minutes before adding broccoli florets and cream. Cook until the orzo is tender.
  7. Mix in grated cheddar cheese until melted.
  8. Serve topped with crispy turkey slices.
