  • 1 large egg (beaten)
  • 3 ounces semi-sweet chocolate (chopped)

  2. Melt butter in a saucepan over medium heat, then stir in espresso powder until well combined.
  3. In a mixing bowl, mash ripe bananas with a fork until smooth.
  4. Combine melted butter and espresso mixture with the mashed bananas, then add granulated and brown sugars, mixing until smooth.
  5. Stir in the beaten egg followed by the flour, baking soda, and salt until just combined; avoid overmixing.
  6. Fold in chocolate chunks gently.
  7. Pour batter into the prepared loaf pan and bake for about 40 minutes or until golden brown on top.
