  • 2/3 cup cold butter (cut into cubes)
  • Grated zest from 1 lemon (optional)
  • 1/3 cup light brown sugar
  • 1/3 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese (softened)
  • ½ cup + 2 tablespoons caster sugar
  • 2 tablespoons corn starch
  • 2 eggs (for filling)
  • 1 and 2/3 cups blueberries
  • ½ cup powdered sugar (for glaze)
  • 23 teaspoons milk

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a springform pan with parchment paper.
  2. In a bowl, combine flour, baking powder, salt, sugars, and lemon zest.
  3. Cut in cold butter until the mixture resembles coarse crumbs. Mix in eggs and vanilla until combined.
  4. Press two-thirds of the mixture into the prepared pan to form a crust; refrigerate.
  5. For the cheesecake filling, blend cream cheese, mascarpone, sugars, corn starch, and eggs until smooth.
  6. Pour half of the filling over the crust, add blueberries, then top with remaining filling and more blueberries.
  7. Bake for about 65-75 minutes or until set; cool gradually.
