  • 1 1/2 cups buttermilk, room temperature
  • 2 Tbsp vegetable oil
  • 2 tsp vanilla extract
  • 3 cups unsalted butter, room temperature (for frosting)
  • 1 Tbsp vanilla extract (for frosting)
  • 1 1/2 tsp fine salt (for frosting)
  • 10 cups powdered sugar (for frosting)
  • 1/2 cup heavy whipping cream (for frosting)
  • 1 cup cookie butter (for frosting)
  • 1/4 cup heavy whipping cream (for decoration)
  • 12 Biscoff cookies (cut into small pieces for decoration)
  • 1 cup cookie butter (for decoration)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round baking pans.
  2. In a bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
  3. In another bowl, cream butter until fluffy; gradually add egg whites, buttermilk, and vanilla until blended.
  4. Combine wet and dry ingredients until just mixed.
  5. Divide batter between prepared pans and bake for about 33 minutes or until a toothpick comes out clean. Cool completely on racks.
  6. For frosting: Beat butter until creamy; gradually mix in powdered sugar and vanilla extract until smooth. Add heavy cream to achieve desired consistency.
  7. Assemble by layering cakes with frosting in between; frost the top and sides of the cake, topping with crushed cookies and drizzling cookie butter.
