  • 250g dark chocolate
  • 1 1/2 cup heavy cream, chilled and divided into 3/4 cup and 3/4 cup
  • 24 oz cream cheese, room temperature
  • 1 cup granulated sugar
  • 1/2 tsp salt
  • Optional: 1 tsp instant coffee
  • ½ cup heavy cream
  • 100g chocolate (dark, semi-sweet, or milk)
  • 1/4 cup granulated sugar
  • 3 tbsp cocoa powder, sifted

Instructions

  1. Prepare a 9-inch springform pan by brushing with butter and optionally lining the bottom with parchment paper.
  2. In a food processor, blend the chocolate cookies with melted butter until fine crumbs form. Press mixture into the prepared pan to create the crust; refrigerate while preparing the filling.
