  • 2 small green peppers, diced
  • 1 small yellow onion, diced
  • 2 cans diced tomatoes (15 oz each)
  • 15 oz can tomato sauce
  • 6 oz can tomato paste
  • 15 ounces water
  • 2 cans kidney beans (15 oz each), drained and rinsed
  • 3 tablespoons chili powder
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 3 tablespoons cumin
  • 1 tablespoon paprika
  • 1 teaspoon chipotle powder
  • ½ teaspoon cayenne pepper
  • ½ tablespoon salt
  • 1 teaspoon white pepper
  • ½ teaspoon baking soda (optional)

Instructions

  1. In a large Dutch oven, sauté diced peppers and onions until translucent.
  2. Add spices (except baking soda) and cook while stirring for 1-2 minutes.
  3. Brown the ground meat in the pot until just done.
  4. Mix in tomato sauce, diced tomatoes, water, and tomato paste thoroughly.
  5. Simmer over medium-low heat for about 15 minutes before adding beans.
  6. Stir in baking soda and simmer until bubbles subside.
