  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon chili powder
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1 package (14 oz) refrigerated pie crusts
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large skillet over medium heat, heat olive oil. Add the chopped onion and sauté for about 3-4 minutes until softened. Stir in minced garlic and cook for an additional minute.
  3. Add ground beef to the skillet, breaking it up with a spatula. Stir in cumin, paprika, chili powder, salt, and pepper. Cook until the beef is browned.
  4. Remove from heat and fold in shredded cheddar cheese until melted into the mixture.
  5. Roll out refrigerated pie crusts on a floured surface using a rolling pin. Use a 4-inch round cutter to cut circles from the dough.
  6. Place a spoonful of the beef mixture at the center of each dough circle without overfilling.
  7. Fold each circle over to create a half-moon shape and seal edges with a fork.
  8. Brush the tops with beaten egg for a golden finish.
  9. Bake on the prepared sheet for about 20-25 minutes until golden brown and crisp.
  10. Allow empanadas to cool slightly before serving warm.
