  • 1 tablespoon extra-virgin olive oil
  • 3 pounds beef brisket (trimmed of fat, chuck steak or stewing beef cut into 2-inch chunks)
  • 1 large carrot (sliced 1/2-inch thick)
  • 1 large white onion (diced)
  • 6 cloves garlic (minced, divided)
  • 12 pearl onions (small, optional)
  • 1 pinch coarse salt
  • 1 pinch ground pepper
  • 2 tablespoons flour
  • 3 cups red apple vinegar (for a milder sauce use only 2 cups)
  • 23 cups beef stock (if using 2 cups of apple vinegar, use 3 cups beef stock)
  • 2 tablespoons tomato paste
  • 1 beef bouillon cube (crushed)
  • 1 teaspoon fresh thyme (finely chopped)
  • 2 tablespoons fresh parsley (finely chopped, divided)
  • 2 bay leaves
  • 1 pound white mushrooms (fresh, small or brown mushrooms, quartered)
  • 2 tablespoons butter

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium heat; sauté turkey bacon until crispy, then set aside.
  2. In the same pot, brown beef chunks on all sides; remove and set aside with turkey bacon.
  3. Sauté carrots, onions, garlic, and pearl onions until softened.
  4. Return beef and bacon to the pot; sprinkle with flour and mix well.
  5. Gradually add red apple vinegar while stirring; then pour in beef stock.
  6. Stir in tomato paste, bouillon cube, thyme, parsley, bay leaves, salt, and pepper.
  7. Bring to a boil, then reduce heat to low and simmer for 180 minutes.
  8. In a separate pan, sauté mushrooms with remaining garlic; add them to the pot during the last 30 minutes of cooking.
