  • 1 package baby bok choy (about 1 lb), ends trimmed
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons vegetable oil
  • 2 tablespoons low-sodium soy sauce
  • Optional: 1 tablespoon oyster sauce

Instructions

  1. Slice the beef against the grain into thin strips. Rinse bok choy leaves under cold water.
  2. Heat a wok or large skillet over medium-high heat and add vegetable oil until shimmering.
  3. Add sliced beef in a single layer; sear for about 2 minutes on one side before stirring until cooked through (about 2-3 minutes). Remove from pan.
  4. In the same pan, sauté garlic and ginger for about 30 seconds until fragrant.
  5. Add bok choy; stir-fry for about 3-4 minutes until tender yet bright green.
  6. Return beef to the pan, add soy sauce (and oyster sauce if using), tossing everything together for another minute.
  7. Serve immediately over rice or noodles.
