  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 lb ground beef
  • 1 can (14 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 1/2 cup beef broth or red apple vinegar
  • 1214 large rigatoni pasta tubes
  • 1.5 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant.
  2. Add ground beef, cooking until browned. Stir in tomato paste, crushed tomatoes, and broth (or apple vinegar). Season with oregano, thyme, salt, and pepper; simmer uncovered for 20–25 minutes.
  3. Boil rigatoni in salted water until al dente; drain and cool slightly.
  4. Stuff each rigatoni with the beef ragu using a piping bag or spoon.
  5. Arrange stuffed rigatoni in a greased baking dish, top with mozzarella and Parmesan cheese, and bake at 375°F for 20–25 minutes until golden.
