  • 1 lb dried pinto beans
  • 4 cups chicken stock
  • 1 bottle beef broth
  • 6 slices turkey bacon
  • 1 medium onion
  • 2 jalapeno peppers
  • 3 cloves garlic
  • Fresh cilantro
  • Ground cumin
  • Dried oregano
  • Salt
  • Black pepper

Instructions

  1. Soak the pinto beans overnight in water for even cooking.
  2. Drain the soaked beans and add them to a large pot with chicken stock, beef broth, and water. Simmer on low heat for about 1½ hours.
  3. In a skillet, cook turkey bacon until crispy; set aside.
  4. Sauté chopped onion, jalapenos, and garlic in remaining grease until soft.
  5. Combine sautéed vegetables and turkey bacon with simmering beans. Add cilantro, tomatoes, cumin, oregano, salt, and pepper. Continue simmering for another 1½ hours until tender.
