  • 1 large carrot (julienned)
  • 5 radishes (thinly sliced)
  • 3 cups red cabbage (thinly sliced)
  • 1/4 cup cilantro (chopped)
  • 23 green onions (sliced)
  • Sesame seeds for garnish
  • 2 tbsp chunky peanut butter
  • 1 tbsp honey
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 4 tbsp soy sauce
  • 1 tsp grated fresh ginger
  • 1 clove garlic (pressed)
  • 2 tsp Sriracha sauce

Instructions

  1. Cook the egg noodles according to package instructions; drain and set aside.
  2. In a small bowl, whisk together all peanut dressing ingredients until smooth.
  3. In a large salad bowl, combine the hot noodles with the dressing, allowing them to absorb the flavors.
  4. While cooling, prepare the vegetables: julienne the carrot, slice the radishes, and chop the cabbage and onions.
  5. Once noodles are at room temperature, mix in all vegetables and toss gently.
