  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter (room temp)
  • 1 cup granulated sugar
  • Zest of 1 medium lemon
  • 1 egg (room temp)
  • 2 teaspoons pure vanilla extract
  • 1/2 cup apricot preserves
  • 1/4 cup organic turbinado sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, salt, and baking powder; set aside.
  3. In a mixer, cream butter until fluffy, then add sugar and lemon zest; mix well.
  4. Incorporate the egg and vanilla until combined.
  5. Gradually add dry ingredients, mixing until just blended; chill dough for 30 minutes.
  6. Line baking sheets with parchment paper. Scoop dough into balls and flatten into disks on the sheets.
  7. Place apricot preserves in the center of each disk, cover with another disk, crimp edges with a fork, and cut slits on top.
  8. Sprinkle with turbinado sugar and bake for about 13 minutes until golden.
