  • 1 cup (200g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups (180g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 medium apple, peeled and finely diced
  • 2 tbsp (25g) granulated sugar for topping
  • 1 tsp ground cinnamon for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually mix dry ingredients into wet mixture until just combined; fold in diced apples.
  6. Spread batter evenly in prepared pan and sprinkle with topping mixture (sugar and cinnamon).
  7. Bake for 25–30 minutes until golden brown; cool completely before slicing.
