Apple Pie Oatmeal Bars are a delicious fusion of classic apple pie flavors and wholesome oats, making them the perfect treat for breakfast or as a snack throughout the day. These bars are not only easy to make but also offer a nutritious alternative to traditional desserts.

  • 2 cups apples (cored, peeled, and chopped)
  • 2 tablespoons unsalted butter
  • 1/4 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons water
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups rolled oats
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 14 tablespoons unsalted butter (cut into pieces)

Instructions

  1. In a medium saucepan over medium heat, melt the unsalted butter. Add the chopped apples, light brown sugar, flour, cinnamon, water, and salt. Cook for about 5–7 minutes until the apples soften slightly. Remove from heat and set aside.
  2. In a large mixing bowl, combine all-purpose flour, rolled oats, brown sugar, baking powder, and salt. Add the cut pieces of unsalted butter to the mixture and blend until crumbly.
  3. Preheat your oven to 350°F (175°C). Press half of the oat mixture firmly into a greased baking dish. Spread the apple filling evenly over this layer and top with the remaining oat mixture.
  4. Bake for approximately 50 minutes or until golden brown. Allow cooling before cutting into bars.
