  • 4 1/2 cups All-Purpose Flour
  • 1 tablespoon Baking Powder
  • 1 teaspoon Baking Soda
  • 2 teaspoons Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Ground Ginger
  • 1/4 teaspoon Ground Cardamom
  • 1/4 teaspoon Ground Cloves
  • 1 cup Cold Butter
  • 1/2 cup Grated Apple
  • 1 cup Chilled Buttermilk
  • 3 tablespoons Unsalted Butter (for glaze)
  • 3 tablespoons Honey (for glaze)
  • pinch Salt (for glaze)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine flour, baking powder, sugar, cinnamon, nutmeg, ginger, cardamom, and cloves.
  3. Cut in cold butter until the mixture resembles coarse crumbs. Stir in grated apple.
  4. Pour in chilled buttermilk and mix until just combined; the dough should be slightly sticky.
  5. Turn out onto a floured surface and gently knead a few times before rolling to about ½ inch thickness.
  6. Cut out biscuit shapes and place on a greased baking sheet.
  7. Bake for 15-20 minutes until golden brown.
  8. While baking, mix chilled butter with honey and salt for the glaze.
  9. Brush warm biscuits generously with the honey butter glaze before serving.
