  • 2 cloves garlic, minced
  • 3 medium carrots, diced
  • 2 stalks celery, diced
  • 1 (15 oz) can diced tomatoes (undrained)
  • 1 (8 oz) can tomato sauce
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can great northern or cannellini beans, drained and rinsed
  • 3 cups beef broth
  • 1 cup ditalini pasta
  • 1 tsp Italian seasoning
  • Β½ tsp salt (adjust to taste)
  • Β½ tsp black pepper

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked; drain excess fat if necessary.
  2. Add chopped onion, minced garlic, diced carrots, and celery. Cook for about 5–7 minutes until softened.
  3. Stir in diced tomatoes (with juices), tomato sauce, both types of beans, beef broth, and seasonings. Bring to a boil; then reduce heat and let it simmer uncovered for 20–25 minutes.
  4. In a separate pot, cook ditalini pasta according to package instructions; drain and set aside.
  5. Just before serving, mix the cooked pasta into the soup or keep it separate to prevent sogginess in leftovers.
  6. Garnish with fresh parsley or shredded Parmesan if desired.
